Ugh. This was my second time making it--I must have been very lucky the first time. I tried making this one with 1/2 99% Scharffenberg chocolate, and 1/2 70% Black and Green's. The chocolate taste was good, although I should have used a bit more sugar, I think; however the consistency of the mousse ended up being very gritty. Once I added the egg yolks to the chocolate, it never seemed to smooth out again. Hmm. I want to blame to recipe--but it's from "The Best Recipe" from <i>Cook's Illustrated</i> which has yet to steer me wrong.
To boot, my stomach felt upset all night. Too much chocolate, I guess. :( Ahh... well, the upside is I'm going to work from home today.
